Great flavor takes perseverance—and a satisfying bite — MorningFly

Originally from Guangdong, China, Xiaoshan loves both cooking and sports. She learned traditional dough-making techniques on the job, and in 2017 began pursuing her dream of a breakfast shop specializing in handmade danbing, Taiwanese egg crepes. Taking one character from each of her two sons' names, she created the hopeful name Chengxiang.

The wrapper is the heart of every danbing. The dough is mixed and rolled by hand in the shop each day, producing a substantial, crisp parcel as generously sized as a little pillow. She marinates the meat herself, insists on freshly slaughtered, never-frozen Taiwanese pork, and uses canola oil throughout, regardless of the added cost.

Her signature danbing combine memories of the street food of her hometown with fresh ideas. Cumin Lamb, Matador and Margherita are just a few of the distinctive flavors.

In 2026, MorningFly took wing again, with a Greek goddess of athletic competition, her curls resembling rolled danbing, bringing good wishes with the morning light. With a spatula in one hand and a badminton racket in the other, Xiaoshan is both a sports-loving cook and a devoted mother. Each bite reflects her resilience and delivers a satisfying chew. As they say back home in Guangdong, she’ll proudly tell you: “Ho ho mei!” — so delicious!
